Andrew Jackson’s Sweet Potatoes

1/2 cup sugar
2 eggs
3 cups cooked sweet potatoes (peeled) – or a large can drained
1 teaspoon vanilla
1/2 cup butter

Beat potatoes, sugar, vanilla, and butter with mixer until light and
fluffy. Pour mixture into butter casserole dish and add praline
topping.

Praline topping
1 cup brown sugar
1 cup toasted, chopped pecans
1/3 cup flour
1/3 cup softened butter

Bake at 350 for 30 minutes.
