White Chicken Chili

1 cooked chicken breast, cubed (this was a big one)
1 cup homemade chicken stock
1 onion, chopped
3 cloves garlic, minced
2 tsp ground coriander
2 tsp ground cumin
1 tsp chipotle chili powder
1/4 tsp each salt and pepper
1 cup dried, soaked, and cooked white kidney beans, or 1 can drained and rinsed
2 cans chopped green chilies
1/3 cup chopped fresh coriander
1/2 fresh squeezed lime (optional)
This recipe makes about 4 servings. Go ahead and use more or less chicken, beans, or add in a few vegetables for fun. Again, use what you have and you can’t go wrong.

In slow cooker, add chopped cooked chicken, chicken stock, cooked or canned white kidney beans, onion, garlic, coriander, cumin, chili powder, salt and pepper. Stir. Cover and cook on high for around 3 hours.

Step Three: Add chopped coriander and lime juice. Heat until coriander is warm.
